Carb

Russet & Baking Potatoes

Baked - Top with butter substitute, fat-free sour cream and turkey bacon.
Mashed - These don't have to be basic anymore! Take a look at the recipe on page 61 of the Cooking Guide.
Fries - Make them baked instead of fried for a delicious, low-fat treat. See recipe on page 26 of the Cooking Guide.

Potatoes are hearty, filling and when you add your favorite low-fat toppings, they can be fun too! Use your imagination. Salsa is a great alternative to butter or sour cream, and it's naturally fat-free. You can top Baked Fries (see recipe on page 26 of the Cooking Guide) with barbecue sauce, mustard, ketchup or even the low-fat Quick Chili (see recipe on page 92) and nonfat cheddar cheese.

Chicken Tenders

Buffalo Chicken Feathers - This is a lighter version of Buffalo Wings. The recipes for a few variations are on page 28 of the Cooking Guide.
Jerk Chicken - Buy jerk seasoning, rub on the tenders, and grill or bake.
Fake Fried Chicken - No one will ever know the difference! You can find this recipe on page 99 of the Cooking Guide.

Vegetable

Mushrooms

Button - Marinate or saute with wine and onions.
Shiitake - A nice change from the regular button mushrooms.
Portobello - Grilled or microwaved for just a minute or two, these mushrooms taste great all by themselves.

There's lots of different mushrooms on the market, and they all have their own distinct flavor. Shiitake mushrooms have a rich, almost smoky flavor. Portobellos are so flavorful and meaty you could make a meal out of them alone. Try marinating and grilling Portobello mushrooms. Then serve it on bun. It makes a great "burger."
